    Place the serving plates or bowls in the refrigerator well before service. The vessel should be cold to the touch when plating begins.

    Remove the tofu from its packaging and allow it to temper, still chilled, until it reaches 8–10°C — not the 4°C of a refrigerator interior. A chilled but not ice-cold surface is the target: the natural sweetness and milky quality of the soy are suppressed below this range and lost.

    Wet the blade of a sharp knife thoroughly. Cut the tofu block into four equal portions in a single clean drawing motion per cut. This is where the dish lives or dies: a dry blade drags across the silk-smooth surface, tearing it and destroying the visual and textural integrity that defines the preparation. Each cut face should be glassy and unmarked.

    Transfer each portion cut-side up onto a pre-chilled plate. Work immediately — the cut surface begins to weep at room temperature.

    Apply a single drop of fresh yuzu juice directly to the tofu surface. Follow immediately with a small mound of katsuobushi, a pinch of finely sliced negi, a small amount of grated ginger, and sliced myoga. Garnish quantity is restrained: the toppings should be visible as accents, not as a covering layer over the tofu.

    Drizzle no more than 1 tsp of usukuchi soy sauce across each portion at the table or immediately before serving. The tofu's surface should remain the dominant sight; soy should pool lightly at the base, not flood the plate. Taste: the first impression must be soy sweetness and milky softness, with katsuobushi smokiness, ginger warmth, and negi sharpness arriving in succession.
