Method

  1. 1
Place the beef in a pot with enough cold water to cover and bring to the boil over high heat, then blanch for 3–4 minutes so that the grey scum and blood drawn out of the meat float free rather than settling back in. Drain, then rinse the beef under cold running water, rubbing away any remaining residue, so the finished braising liquid stays clear and clean-tasting.
  2. 2
Return the blanched beef to the pot and add the ganjang, water, sugar, and whole garlic cloves, establishing a 1:4 soy-to-water ratio, because starting in a dilute brine lets the long, slow heat do its work before the salt bears down on the meat — begin at full concentration and the beef will seize, tighten, and never relax into the tenderness you want. Bring to the boil, reduce to a steady simmer, cover, and braise for 30 minutes. At the end of this time the beef should feel yielding when pressed with tongs but not yet shredding.
  3. 3
Remove the lid, add the hard-boiled eggs and whole chillies to the pot, and continue to braise uncovered over a moderate simmer for 20 minutes, turning the beef and eggs occasionally so they colour and drink in the glaze evenly rather than deepening on one side only. The dish is ready when the sauce coats the back of a spoon and appears glossy and dark; a pale, thin sauce indicates insufficient reduction.
  4. 4
Transfer the beef to a board and allow it to cool slightly, then pull the meat apart along the natural muscle grain using chopsticks or two forks. Properly braised jangeorim shreds with gentle pressure; if the meat resists and tears rather than separating cleanly, return it to the glaze and continue simmering in short increments until it yields.
  5. 5
Return the shredded beef to the pot and toss to coat it thoroughly in the reduced glaze. Transfer the beef, eggs, chillies, and all braising liquid to a clean, lidded container, and serve at room temperature over plain white rice, or refrigerate for up to two weeks — the high ganjang content keeps the meat safe and, given a day's rest, the flavour deepens further into the shreds.
