Rinse the short-grain rice repeatedly in cold water until the water runs clear. Cook by the absorption method in a heavy-lidded pot or rice cooker. The rice is done when each grain is distinct, tender, and faintly glossy — a clean, sweet steam rises when the lid is lifted.

Prepare the dashi. Bring to a gentle heat and dissolve the miso paste into the stock, stirring until fully incorporated. Add the tofu cubes, wakame, or root vegetables according to season. Do not boil after the miso is added. Hold the soup at serving temperature and do not ladle until the moment diners are seated — miso soup must arrive hot.

Salt or marinate the salmon fillets in advance. Grill over direct heat or under a broiler, skin side down first, turning once. The fish is ready when the surface is lightly caramelised and the flesh flakes cleanly at its thickest point — the salt or miso crust should show a pale, dry char at the edges.

Beat the eggs lightly with dashi, soy sauce, and sugar. Heat the tamagoyaki pan with a film of neutral oil over medium heat. Pour in a thin layer of egg, allow it to set at the edges while the centre remains just liquid, then roll forward with chopsticks or a spatula. Push the roll back, oil the pan again, and add the next layer — each addition bonds to the previous. Repeat until the egg mixture is exhausted. The finished roll should be firm enough to hold its rectangular form when pressed gently, with a faint golden exterior and a layered interior that is moist, not dry.

If preparing onsen tamago, hold eggs in water maintained precisely at 65–68°C for 30 to 40 minutes using a sous vide circulator or carefully monitored water bath. Crack each egg into a small bowl: the white should be barely cohesive and translucent, the yolk fully rounded and silky. Serve in the bowl with a small measure of dashi and soy sauce poured around.

Arrange the three sides — natto (if serving), tsukemono, and tofu or aemono — in separate small dishes. Tsukemono should offer at minimum two textural varieties. Plate each element individually: rice in a bowl, miso soup in a lacquer bowl, grilled fish on a separate small plate, tamagoyaki sliced into three even pieces. The assembly is not garnished or combined — each component occupies its own vessel.

Brew green tea or hojicha and serve immediately. Pour the miso soup at the table as diners sit. The meal begins.
