Confirm the sushimeshi is at body temperature. Press the back of the hand against the side of the bowl: the rice should feel neither cold nor hot against the skin. Cold rice is stiff and has lost vinegar integration — it cannot be corrected at this stage. Transfer the rice into a large lacquer jubako box or wide shallow bowl, spreading it to a depth of approximately 1.5–2 cm as an even base layer. The layer is done when the surface is level and no bowl edge is visible beneath the rice.

For Osaka barazushi style: add the marinated kanpyo, shiitake, lotus root, carrot, and burdock to the rice and fold gently with a flat rice paddle using a cutting-and-turning motion. This is where the dish lives or dies — overmixing crushes the grains and produces paste; the fold must be deliberate and minimal, stopping the moment the ingredients are evenly distributed. The surface should show distinct, separate grains throughout.

For Edo-mae style: arrange the maguro and salmon slices across the rice surface. The slices should lie flat — if they curl or stand, they have been cut too thick. Distribute the cooked ebi and tamago strips across the remaining surface. At this stage approximately 70% of the rice surface should remain visible; if the surface appears fully covered, the toppings are too dense.

Place the ikura in small clusters between the fish slices. Add nori strips and yuzu zest. For Hinamatsuri: scatter sakura-denbu across open rice areas to establish the pink element of the festival palette (pink, white, green). Assess the colour distribution — no single colour should dominate a quadrant of the bowl; adjust placement until the arrangement reads as intentional and balanced rather than random.

Immediately before service, place the cucumber slices and shiso leaves. These are applied last because they discolour and wilt on contact with the vinegared rice. The shiso should retain its full green colour and the cucumber its brightness at the moment the dish reaches the table — any wilting or browning indicates the topping was applied too early.
