    Prepare all gomoku toppings — simmered renkon, shiitake, kampyo, and carrot; blanched snow peas; cooked shrimp — and bring each to ambient temperature before assembly. The toppings must not be cold from refrigeration, as cold ingredients will chill the shari and suppress its vinegar balance.

    Make the kinshi tamago: beat the eggs and cook in a lightly oiled pan over medium heat as a single very thin sheet. When just set with no liquid remaining on the surface, slide onto a board, roll loosely, and slice across into fine strands. Set aside at room temperature.

    Season the cooked rice with sushi vinegar, folding gently with a shamoji (rice paddle) while fanning to cool. The shari is ready when it reaches body temperature — neither refrigerator-cold nor steaming hot. This is the step on which the dish lives or dies: cold shari loses its vinegar balance and, in the Edomae version, hardens the fat in any fish; warm shari condenses moisture onto toppings and softens their texture. The rice should feel neither warm nor cool against the inside of the wrist.

    Transfer the shari to a wide, shallow serving bowl or individual lacquer bowls. Spread it in an even layer without compressing the grains.

    Arrange the toppings over the shari with deliberate attention to colour distribution: red (carrot), green (snow peas), yellow (kinshi tamago strands), and white (renkon, kampyo) should appear across the full surface in balanced positions rather than in massed groups. Scatter the shrimp and shiitake among the vegetables. If using denbu, distribute the pink floss as a final accent. The composition is complete when no single colour dominates a quadrant of the bowl.
