    Rinse the short-grain rice until the water runs clear. Cook by the absorption method. The rice must be sticky enough to hold the sauce — basmati or long-grain rice will not perform this function. The grains should be tender and cohesive, clinging lightly when pressed.

    Heat the oil in a heavy pot over medium heat. Add the onion and cook, stirring regularly, until deeply golden and beginning to caramelise. The onion is ready when it has reduced by two-thirds in volume and smells sweet and faintly nutty — this sweetness is the structural foundation of the sauce.

    Add the meat and brown on all sides. Add the carrot and potato. Pour over 800 ml of water and bring to a simmer. Skim any foam from the surface. Simmer until the potato and carrot are just yielding to a knife — not yet fully tender, as they will continue to cook after the roux block is added.

    Remove the pot from the heat. Break the roux blocks into the liquid and stir steadily until fully dissolved — no pale streaks of roux should remain. This is the step on which the dish lives or dies: the roux block must melt completely into a smooth, uniform mass before heat is reapplied, or the sauce will be lumpy and the spice blend will distribute unevenly.

    Return the pot to low heat. Add the Worcestershire sauce and the grated apple. Simmer gently, stirring frequently to prevent the thickened sauce from catching on the base. The sauce is ready when it is glossy, viscous, and coats the back of a spoon heavily — it should hold a clean line when a finger is drawn across the spoon.

    Mound the cooked rice on one side of a wide, shallow bowl or plate. Ladle the curry sauce alongside and partially over the rice. Place a portion of fukujinzuke directly beside the curry — its sweet-sour crunch is an essential counterpoint to the sauce, not a garnish. Serve rakkyozuke on the side.
