    Place the purged asari clams in a wide pan with 150 ml of water over medium-high heat. Cover and steam until all shells have opened, 3–4 minutes. Discard any clams that remain closed. Remove clam meat from the shells and set aside; strain and reserve all steaming liquor through a fine sieve.

    Measure the reserved clam liquor and supplement with water or dashi to reach a total of 600 ml. Dissolve the miso completely into this liquid while it is still warm. Taste: the liquid should be distinctly savoury but not aggressively salty — this miso concentration will bake into the rice and define the dish.

    This is where the dish lives or dies. Combine the washed rice and the miso-clam liquid in a heavy rice pot or donabe. The miso must enter the pot with the rice and cook through the entire absorption — not stirred in at the end. Bring to a boil over medium-high heat, then reduce immediately to the lowest possible heat, cover tightly, and cook for 12 minutes. Do not lift the lid. The miso bakes into the rice during this phase; a pot opened too early or miso added after cooking will miss the defining character of authentic Fukagawa-meshi.

    For maze-gohan format: when the 12 minutes have elapsed, scatter the reserved clam meat and half the sliced green onion over the surface of the rice. Replace the lid and allow to steam off the heat for a further 10 minutes. The rice is done when it has absorbed all liquid and the base carries a faint toasted miso fragrance without any scorch.

    For kakemeshi format: cook the rice separately in plain water or dashi using the same absorption method. Meanwhile, return the strained clam liquor to the pan, dissolve the miso into it, bring to a gentle simmer, add the clam meat and a pinch of sansho pepper if using, and heat through for 1 minute. Serve the cooked rice in deep bowls; pour the hot clam-miso broth directly over the rice at the table. Serve immediately — the dish is ready when steam rises sharply on contact and the oceanic aroma is immediate.

    Finish both formats with the remaining sliced green onion scattered over the surface. The green onion is not garnish — it is part of the preparation as the entry specifies it as a primary aromatic. Serve at once; the dish does not hold.
