Press the momen tofu under a weighted board for a minimum of 30 minutes — overnight in the refrigerator is preferred. When pressed, the tofu holds its shape under light pressure and yields no further liquid when a corner is squeezed.

In a bowl, combine the pressed and crumbled momen tofu with the grated nagaimo, rehydrated hijiki, carrot julienne, and burdock julienne. Mix until the nagaimo mucilage is evenly distributed and the mass coheres. This is where the dish lives or dies: insufficient pressing or insufficient nagaimo integration will cause the patties to fracture in the oil and steam rather than fry. The mixture, when pressed in the palm, should hold a patty cleanly without cracking at the edges.

Form the ganmodoki mixture into patties of even thickness. Heat the frying oil to 160°C. Fry the patties at this temperature until the interior is cooked through and the patties are set — the surface will appear pale gold and the patties will float freely without sticking.

Increase the oil temperature to 180°C and continue frying briefly until the exterior achieves a deep, even golden crust. Remove and drain. The finished ganmodoki is firm to the touch, the crust resistant, and the colour uniformly amber.

For the age-dashi tofu: ensure the cut tofu portions are completely dry on all surfaces. Dust each piece evenly and lightly in katakuriko, shaking off any excess. The coating should be a thin, barely visible film — not a thick crust.

Heat the frying oil to 170–180°C. Fry the dusted tofu portions, turning once, until the exterior is a delicate, pale gold shell. The crust should be crisp to the touch and yield a faint papery sound when tapped lightly. Remove and drain.

Prepare the ankake immediately before service. Combine the kombu dashi, light soy, and mirin in a small saucepan and bring to a gentle simmer. Add the kuzu or katakuriko dissolved in cold water, stirring constantly until the sauce thickens to a light, translucent, gently viscous consistency. The ankake should coat a spoon lightly and hold a trail for several seconds.

Place the fried age-dashi tofu immediately in shallow bowls and pour the hot ankake over at service only — the crisp shell begins to soften within minutes of contact with the sauce. Serve the ganmodoki separately or proceed to oden simmering as required.
