    Rinse the rice in cold water until the water runs nearly clear. Cover with fresh cold water and soak for 30 minutes. Drain thoroughly in a colander. The grains should appear opaque and uniformly hydrated — no translucent cores.

    Combine the dashi, usukuchi soy sauce, mirin, and sake to form the seasoning liquid. The liquid should be a very pale amber — if it reads dark at this stage, it will produce over-coloured, soy-dominant rice. Adjust the total volume of seasoning liquid to 480 ml for 400 g (2 rice-cooker cups) of raw rice, maintaining the 1:1.2 rice-to-liquid ratio.

    For gomoku gohan: drain the burdock and combine it with the carrot, konnyaku, aburaage, and chicken in the pot with the drained rice. Pour the seasoning liquid evenly over. Do not stir. For matsutake gohan: place the drained rice in the pot, pour the seasoning liquid over, then lay the sliced matsutake on top without mixing. For taimeshi: place the drained rice in the pot, pour the seasoning liquid over, then rest the whole grilled bream on top. In all versions, the lid goes on and does not come off during cooking.

    This is where the dish lives or dies. Bring the pot to a boil over medium heat, then reduce to the lowest possible simmer and cook for 12 minutes. Do not lift the lid, do not stir — the steam channels forming through the rice are essential to even cooking and grain integrity. Any interruption collapses those channels and produces an uneven, damaged result.

    Optional okoge crust: if cooking in a donabe or heavy-bottomed pot and the bottom crust is desired, raise the heat to high for 30 seconds at the end of the 12-minute simmer. A faint crackle and a toasty, caramelised smell from the base of the pot signals that the okoge is forming.

    Remove from heat and rest, lid on, for 10 minutes. The residual steam finishes the cooking. For gomoku gohan, add edamame or mitsuba now, replacing the lid immediately for the remainder of the rest.

    For taimeshi: open the lid and lift the bream to a board. Use chopsticks to flake all flesh cleanly away from the bones. Discard the bones. Return the flaked fish to the rice. For all versions: fold the contents gently once or twice with a shamoji (rice paddle), turning from the bottom in broad cuts — not stirring. Each grain should be distinct, lightly glossy, and coloured a pale even tan. Serve immediately.
