Method

  1. 1
Cook the rice by your standard absorption method. While still hot, fold through the combined rice vinegar, sugar, and salt using a cutting motion with a flat paddle — do not stir, which would make the grains sticky. Fan the rice as you fold. The rice is ready when it is glossy, each grain distinct, and the seasoning is mild rather than assertive. Set aside at room temperature covered with a damp cloth.
  2. 2
Whisk the eggs with the sugar and a pinch of salt until fully combined. Heat a flat pan over low heat and brush with the barest film of neutral oil. Pour in just enough egg to coat the pan in a paper-thin sheet — a crepe of uniform thickness. Cook without disturbing until the surface is just set and no longer wet. Slide onto a board. Repeat with any remaining mixture. Fold each sheet into thirds and cut across the fold into shreds of 1–2 mm. The kinshi tamago is done when the threads are fine, consistent, and bright yellow; uneven or chunky shreds indicate insufficient thinness in the omelet or imprecision in the cut.
  3. 3
Slice the lotus root thinly and place in a small pan with sweetened rice vinegar and enough water to cover. Simmer briefly until just tender. Remove and cool. The slices are done when a knife tip meets no resistance and the hole pattern is clearly visible from above, reinforcing the floral visual.
  4. 4
Blanch the snow peas in boiling salted water for no more than 1 minute. Transfer immediately to cold water. The peas are done when their colour is vivid spring green and they retain a clean snap.
  5. 5
Transfer the seasoned rice into a shallow lacquered box (jubako) or wide shallow bowl — its square or round form must allow the full surface to be visible from above. Spread the rice to an even depth.
  6. 6
Arrange the toppings over the rice surface in a systematic, deliberate sequence: begin with the kinshi tamago, draping the yellow threads evenly across the rice as a base layer of colour. Then place the shrimp (red-pink), snow peas and edamame (green), and lotus root slices cut-side up (white, flower-patterned) in distinct zones or radiating groups. The composition must read as a spring garden — red, yellow, green, pink, and white each occupying defined space. Finish by placing the shiso leaves or cherry blossom petals last. The preparation is done when the colour composition is complete and legible from directly above.
  7. 7
Refrigerate for no longer than 1 hour before service. Remove and serve at cool room temperature. The composition is past its prime when colours begin to migrate into the rice or the kinshi tamago threads lose their separation.
