    Prepare the dashi. Combine the kombu with 1 litre of cold water in a pot. Add the soaked shiitake and their strained soaking liquid. Bring slowly to just below a simmer; remove the kombu before the water boils. Continue to simmer the shiitake for 10 minutes, then remove. Reserve the dashi. The liquid should be pale gold and carry clear umami on the palate without any bitterness.

    Drain the gobō and pat dry. Heat the sesame oil in a heavy pot over medium heat until the oil shimmers and its toasted fragrance rises — this is the moment to add the vegetables. Add the gobō first, then the daikon, carrot, satoimo, and konnyaku. Sauté, turning regularly, until each surface has made contact with the oil and the kitchen carries a warm, nutty, earthy scent. This sautéing step builds the depth the finished soup cannot recover if skipped.

    Pour the prepared dashi over the sautéed vegetables. Bring to a gentle simmer and cook, partially covered, until the daikon has turned translucent and yields without resistance to the tip of a chopstick, and the satoimo has begun to release its starch into the broth, giving the liquid a faint body. This is where the dish lives or dies: vegetables simmered to translucency and starchy cohesion, not collapsed into mush.

    Season with the light soy sauce and mirin. Stir gently and taste: the broth should be gently savoury, allowing the mineral depth of burdock and the sweetness of daikon to carry the soup rather than the seasoning itself. Adjust with a little additional soy if necessary, in small increments.

    Add the crumbled firm tofu in the final 5 minutes of cooking. Stir once to distribute. The tofu is ready when it is heated through and retains visible, irregular texture — it should not dissolve into the broth or collapse into smooth curds.
