    Place a wide pan over medium-high heat and melt the 15 g butter for the rice. Add the diced onion and cook, stirring, until translucent and faintly golden at the edges. Add the chicken and cook through, breaking up any clumps. Add the peas. The pan should smell of caramelised allium and rendered chicken fat.

    Add the cooked rice to the pan and stir-fry over high heat until the grains are fully coated with the cooking fat and separated. Pour in the 80 ml ketchup and toss continuously until every grain is evenly coloured a deep tomato-red with no pale patches visible. Season with salt — the rice requires more seasoning than expected; taste repeatedly until the acidity and umami are in balance, not merely sweet.

    Divide the ketchup-rice into four equal portions. Mould each portion into an oval or log shape on a warmed plate using a rice bowl or small bowl as a mould; the shape should hold its form cleanly when turned out.

    THIS IS WHERE THE DISH LIVES OR DIES. For the torori omelette, work one portion at a time. Beat 2 eggs with 5 ml cream until just homogeneous. Set a small non-stick pan over high heat and add 15 g butter; when the butter foams and the foam begins to subside, pour in the egg mixture in one motion. Cook for 10–15 seconds only, agitating the pan and drawing the set edges inward with a spatula. Remove from heat while the centre is still visibly liquid — it must appear underdone. Immediately slide or invert the omelette over the moulded rice, then draw a single slit along its crown with a knife tip; the barely-set interior will open and drape over the rice in a flowing cascade. Any omelette cooked beyond this point will not open and will not drape.

    Draw ketchup in a spiral, heart, or written message across the surface of the draped omelette. The line should be fluid and unbroken. Serve immediately — the omelette continues to set from residual heat and the dish does not wait.
