    Whisk the eggs into the cold dashi. Add the sifted flour and salt. Whisk until the batter is smooth and free of lumps. The batter should be thin — noticeably lighter in body than a crêpe batter. This dashi dominance, with dashi forming 80–90% of the liquid, is what produces the characteristic molten interior; water is not an acceptable substitute.

    Set the cast-iron takoyaki-ki (half-sphere mould) over high heat. Oil every well thoroughly. Preheat at high heat for a minimum of 5 minutes. The mould is ready when a drop of batter sizzles immediately on contact and does not adhere to the iron. A cool or under-oiled mould will cause the batter to bond to the metal and prevent clean sphere formation.

    Pour batter into each well until slightly under-filled — do not fill to excess. Into each well, place one octopus cube, a pinch of tenkasu, a small amount of chopped spring onion, and a small amount of chopped pickled ginger. All filling elements must be placed into the wet batter at this stage, before any setting occurs.

    This is where the dish lives or dies. Cook over high heat for approximately 2 minutes. Watch the edge of each ball: the moment the bottom arc of batter is set and opaque — with a clean, pale crust visible at the mould rim — but the top surface remains liquid and unset, make the first turn. Insert a metal skewer or takoyaki pick at the mould edge and rotate each ball 90 degrees in a single, decisive movement. Hesitation at this moment tears the partially formed crust and produces misshapen, split balls. Turning too early, before the crust has set, produces the same result.

    Continue cooking. Rotate each ball in 30-second intervals, turning in successive 90-degree increments until all surfaces are uniformly golden and the ball holds its spherical shape without assistance from the mould wall. The finished takoyaki should be crisp and deep golden on all surfaces.

    Remove the takoyaki immediately to a serving board or dish. Apply okonomi sauce and Kewpie mayonnaise. Scatter aonori, then place katsuobushi flakes on top at the last moment before the dish reaches the table. The katsuobushi will move visibly from the retained heat of the balls. Serve without delay — the contrast of the crisp exterior and the barely-set, molten dashi interior collapses as the balls cool.
