Select the otoshi component according to the current season. The seasonal sides are simmered spring vegetables, chilled tofu with yuzu in summer, root vegetable kinpira in autumn. The selection itself is the primary creative decision and communicates kitchen philosophy before any order is placed. The dish is determined when the ingredient chosen is unambiguously of the season.

Prepare the component to its appropriate technique — simmer, chill, pickle, or marinate — using seasoning appropriate to the base: dashi and soy for simmered preparations, yuzu for chilled tofu, mirin-balanced soy for kinpira or mushrooms. The dish is ready when the seasoning is in balance and the preparation is technically clean — neither under-seasoned nor masked.

Portion into a single small vessel per guest. Plate with economy: the otoshi is a bite, not a course. It is set before the guest immediately upon seating, alongside the first drink, without being ordered. The dish is correctly served when both otoshi and first drink arrive together — the simultaneous arrival constitutes the izakaya greeting ritual.
