In a separate pan over medium heat, brown the minced beef and finely diced onion together, breaking the beef into fine pieces as it cooks. Cook until the onion is translucent and the beef shows no pink. Combine immediately with the warm mashed potato. Season with salt, pepper, and nutmeg if using. Stir to a uniform mixture.

Spread the filling on a tray and cool completely at room temperature, then refrigerate until cold and firm throughout. The filling is ready when it holds a clean shape under pressure and does not slump.

This is where the dish lives or dies: divide the cold filling into eight equal portions. Shape each into a flat oval with firm, deliberate pressure, eliminating all air pockets. Any trapped air will burst the korokke in the oil. The surface should feel dense and uniform with no soft or hollow areas beneath the skin.

Set out three shallow dishes in sequence: plain flour, beaten egg wash, and panko. Coat each shaped korokke in flour first — a thin, complete layer that provides adhesion. Pass immediately through the egg wash, allowing excess to drip. Press firmly into the panko so the flakes adhere in an even, substantial crust. No bare patches should remain.

Heat the frying oil to 170 °C. Fry in small batches — no more than two or three korokke at a time — to maintain temperature. Lower each korokke gently into the oil. Fry, turning once, until the panko crust is deep golden and the crust sounds hollow and crisp when tapped lightly. Remove and drain upright on a rack.

Rest the fried korokke for two minutes on the rack before serving. Internal residual heat completes the cooking and sets the structure. Serve with Worcestershire sauce and tonkatsu sauce alongside.
