    KANSAI METHOD — Place the iron nabe pot over high heat. Add the gyūshin suet and render until fully liquid, moving the fat across the surface. Discard the solids. The fat is ready when it shimmers, smells deeply of beef tallow, and coats the pan in a thin, even film.

    Lay the wagyu slices into the very hot rendered fat in a single layer, folded once. Sprinkle sugar directly over the searing beef and allow it to caramelise briefly against the meat. This is where the dish lives or dies: the beef must sear in intensely hot suet — not warm fat — so that the sugar caramelises and the beef's own juices begin to build the sauce; a lukewarm pan produces a stewed, not a seared, result. The surface of the beef colours from red to just-browning at the edges before the next step.

    Add soy sauce and then sake or mirin to the pot in a steady pour around and over the beef. The sauce is formed entirely from the beef juices and these seasonings — no broth is added unless the pot dries. If it dries, add water in small increments only. Cook the wagyu 10–15 seconds in total; remove while still barely pink at the centre.

    Add the grilled negi and tofu to the pot, followed by shirataki and shimeji. Allow the vegetables to absorb the sauce, turning once. They are ready when the tofu is heated through and the negi is tender but not collapsed.

    Add shungiku in the final 30 seconds only. Remove from heat as soon as the leaves have just wilted — they must retain their fresh, herbal character. Prolonged cooking destroys it.

    Each diner beats a premium egg in a small individual bowl. Each piece of sukiyaki — beef or vegetable — is lifted from the pot and dipped immediately into the beaten egg, which coats and lightly cooks on contact with the hot food. The dip cools the piece slightly, enriches its flavour, and forms a protective coating. All three functions are simultaneously active.

    KANTO METHOD (alternate) — Combine dashi, soy sauce, mirin, and sugar in the nabe pot in a 4:1:1 ratio with sugar to taste. Bring to a simmer. Add tofu and negi first so they absorb the warishita broth, then mushrooms, then wagyu last. Cook wagyu 10–15 seconds maximum; remove while barely pink. Serve with the beaten egg dip as above.
