    Whisk the flour into the dashi in a steady stream until no lumps remain, then beat in the eggs and the grated yamato-imo. The batter must be thin and fully liquid — far looser than a crêpe batter. This 4:1 ratio of dashi to egg by weight is the structural basis of the togashi naka interior; do not reduce the dashi.

    Set the takoyaki pan over its heat source and brush each hemispherical mould generously with oil. Heat until a drop of batter sizzles immediately on contact and sets within five seconds. A cold or under-oiled mould will cause the batter to adhere to the metal and resist turning.

    Pour batter to fill each mould well to the brim and slightly overfilling into the channels between wells. Working quickly, place one piece of octopus into each mould, then distribute tenkasu, beni shoga, and negi evenly across all moulds.

    This is where the dish lives or dies. After approximately 90 seconds — when the bottom hemisphere is visibly set and opaque at the mould edge but the top remains liquid — insert the takoyaki pick at the edge of each sphere, not the centre, apply a small downward push, and rotate 90° with a lift so the set base becomes the side wall and the raw batter flows to fill the void. The sphere must hold its rotated position; if it collapses, the bottom was not yet sufficiently set. Continue turning every 60–90 seconds, rotating each ball through successive 90° increments, until all surfaces are uniformly golden and the sphere is fully formed. The interior must remain molten — press gently with the pick and feel resistance at the exterior shell yielding to soft liquid within.

    Remove the completed spheres to a plate immediately. The service window is two to three minutes. Working in order: dust with aonori powder, drizzle takoyaki sauce over all spheres, apply Kewpie mayonnaise in crossing lines, and finish with katsuobushi. The bonito flakes will begin to wave from the convection heat of the spheres — a sign the takoyaki are still at correct serving temperature.
