    Cook the rice by the absorption method and serve it immediately into a bowl while it is at full heat. The grains must be steaming — lukewarm rice cannot partially set the egg white and produces an unpleasantly raw texture.

    Break the egg directly into the centre of the rice — not into a separate vessel. The yolk should sit intact on the peak of the rice mound; this is the visual signature of the preparation.

    Mix vigorously with chopsticks, working from the centre outward, until every grain is evenly coated and the mixture is glossy and uniform. The residual heat of the rice partially sets the egg white while the yolk remains flowing. This is where the dish lives or dies: under-mixing leaves pockets of unincorporated raw white; thorough mixing produces the characteristic silky, glossy coating on each grain.

    Add the soy sauce over the mixed rice — never before mixing, as early addition seasons unevenly. Stir briefly to distribute. Taste: the salt-umami of the soy should balance the yolk's inherent sweetness without overpowering it. Add sesame oil, if using, at this point.
