    Bring the eggs to room temperature before use. Cold eggs applied to hot rice create uneven patches of partial cooking; the egg must be at ambient temperature so that its contact with the rice is uniform. The egg is ready when it feels neither cold nor warm to the touch against the inside of the wrist.

    Cook the rice in a rice cooker. Serve immediately from the cooker, while the rice is still steaming. Divide between two bowls. The rice must be freshly cooked and visibly steaming — reheated rice lacks both the moisture and the sustained heat required for the egg-coating effect that defines the preparation.

    Crack one egg per bowl directly onto the centre of the hot rice. For maximum richness and concentration of yolk fat, the white may be discarded and only the yolk used; the white, if included, dilutes colour and fat. This is the step on which the dish lives or dies: if the rice is not steaming hot at the moment the egg lands, the egg will pool as a cold raw liquid rather than beginning its partial cook against the grains, and no subsequent action will recover the silky coating that is the point of the preparation.

    Apply three drops of soy sauce per bowl — no more. TKG soy is a whisper of salinity, not a seasoning layer. A full measure of soy sauce overwhelms the pure egg-rice character that is the entire purpose of the preparation. The soy should be barely perceptible as a separate note.

    Mix vigorously with chopsticks using circular strokes, working from the centre outward, until the egg coats each grain. The degree of integration is personal: some prefer visible streams of yolk running through white rice; others mix to full homogeneity. The finished bowl should appear uniformly glossy and pale gold, each grain lacquered with egg. Taste for soy; add a further drop only if no savouriness is perceptible.

    Add optional garnishes — nori strips, toasted sesame, umeboshi, or mentaiko — at the table, according to personal preference. The purist position holds that egg, rice, and soy alone constitute the complete form. Serve immediately; TKG does not hold.
