    Steam Japanese short-grain rice by the absorption method and transfer immediately to a bowl. The rice must be served at once: touch the outside of the bowl — it should be too hot to hold comfortably, confirming an interior temperature of 70–80°C.

    If using dashi, add a single drop to the empty bowl before the rice is added, or to the rice surface now. Crack the egg and separate the white into the bowl directly over the rice. Stir the white briskly into the hot rice so that the heat of the grains begins to set it — the white will turn from transparent to faintly opaque and the rice will take on a creamy, unified appearance rather than remaining as separate grains. This step is where the dish lives or dies: rice below 65°C will not set the white, producing a watery, unintegrated result; rice at the correct temperature transforms it into a silky coating.

    Place the raw yolk centrally on the mixed rice. Drizzle the TKG shoyu evenly over the surface — the quantity should be sufficient to coat the entire bowl when mixed. Taste before mixing: the seasoning should read as savoury and full without salinity dominating the egg.

    Mix vigorously at the table, fully incorporating the yolk into the rice until the bowl is uniform in colour — pale gold, creamy, and cohesive. The finished texture should be luxuriously glossy, with each grain coated rather than swimming in liquid.
