    Cook the rice according to the standard absorption method. While still hot, fold the vinegar seasoning through the rice using a cutting motion — do not stir. Fan the rice as you fold to cool it rapidly. Allow to rest until the rice reaches approximately 30 °C — warm to the touch but not steaming. At this temperature the rice is most workable: too cold and the formed ball will crack; too hot and delicate fish toppings will be damaged by residual heat. The rice is ready when it feels body-warm against the back of the hand.

    Lay a square of plastic wrap flat on the work surface. Place one thin slice of fish — or a cucumber round, or a halved shiso leaf — in the centre. If using shiso beneath fish, layer shiso first, then fish on top. Portion the seasoned rice into balls of approximately 30 g each — small enough that the finished temarizushi is consumed in a single bite.

    Place the rice ball on top of the topping in the plastic wrap. Gather the four corners of the wrap upward and twist firmly, applying uniform pressure to form a compact, smooth sphere. This is where the dish lives or dies: the ball must be cohesive enough to hold its shape when handled, but the pressure must stop short of compressing the grains into a dense mass — when the wrap is opened, each grain should remain visually distinct. Unwrap and inspect: if the surface is smooth and the ball retains its form without crumbling, the compression is correct.

    Transfer the formed temarizushi, topping-side up, to a tray. Refrigerate uncovered for 10 minutes. This brief chilling sets the shape before service. The balls should hold their form cleanly when lifted — a ball that slumps or spreads has been insufficiently pressed.

    Apply any delicate toppings — raw fish slices not already pressed into the ball, fresh roe, edible flowers, kinome, or microgreens — immediately before service. Arrange the finished temarizushi on a round platter in a seasonal composition: colour, height, and variety of topping create the mosaic display that is the defining visual character of the dish.
