    Score the fat band of each rosu cutlet 5 mm deep at 2 cm intervals along its length. This prevents the fat from contracting and curling the cutlet during frying. Season lightly. Dredge each cutlet in flour, shaking off the excess, then pass through the beaten egg, and finally lay into the panko. Do not press the panko onto the surface — allow it to adhere through the egg alone; compression breaks the airy crumb structure. The coating is ready when the panko lies in an even, unmatted layer across the surface.

    Heat the oil to 155 °C (verified with a thermometer). Lower two cutlets into the oil. Fry for 6 minutes without agitation. The exterior should colour only lightly at this stage — a pale gold. Remove to a wire rack and rest for 3 minutes. This is the first fry of the double-fry (ni-do age) method.

    This is where the dish lives or dies. Raise the oil temperature to 180 °C. Return the rested cutlets to the oil for exactly 2 minutes. The panko crust must achieve an intense, deep amber and the surface must shatter audibly at the touch of a chopstick or tongs — a crackling, hollow sound indicates the moisture has been driven from the crust. Oil absorbed into the panko at the lower temperature is expelled by the high-temperature second fry, producing the layered, airy crunch that defines tonkatsu. Remove immediately to a clean rack.

    Rest the cutlets on the rack for 3 minutes, off heat, in open air. To confirm doneness, insert a chopstick perpendicular to the thickness of the cutlet — it should enter and retract without resistance. This rest allows fibres to relax and juices to redistribute through the interior.

    Slice each cutlet immediately after the rest, cutting into 2 cm strips before the crust can absorb steam from the hot interior. Arrange the strips on the plate, restoring the cutlet's original form. Serve at once alongside the drained ice-water cabbage, karashi, and tonkatsu sauce.
