    Divide the shiroan into three portions. Tint each portion separately: one gold, one ochre, one russet, using the autumn palette. Work the colouring into each portion until the tint is fully and evenly incorporated. The paste must remain smooth and pliable — it should hold its shape when pressed lightly with a finger yet yield without cracking. This is the foundation on which the entire piece rests.

    Prepare the kinton strainer. Load the three tinted portions of shiroan into the strainer in deliberate sequence — gold at one side, ochre at the centre, russet at the far side — positioned so that when the paste is pressed through the fine mesh, the strands emerge in the intended colour gradient (bokashi) from golden to russet across the piece. The arrangement of paste within the strainer before any pressing begins is where the dish lives or dies: once pressing starts, the colour pattern cannot be corrected.

    Place a single kuri shibukawani at the centre of the palm or on a square of dampened cloth. Using the shamoji, press the tinted shiroan through the kinton strainer with steady, even pressure — not aggressive force. Strands must fall as individual delicate threads, not compressed clumps. Layer the strands around the chestnut, rotating the piece to achieve even coverage and the correct surface texture suggesting a chestnut husk or chrysanthemum petal arrangement. The finished surface should show clearly separated strands with the full bokashi gradient visible across the sphere.

    Set the completed kinton aside at room temperature. Do not refrigerate — cold hardens the bean paste and collapses the delicate strand texture. Serve the same day they are made; the strand texture deteriorates within hours.
