Method

  1. 1
Pour the coconut cream into a wide, heavy pan or wok set over a medium-high flame and cook it without stirring, so the fat separates from the solids and pools visibly at the surface — this cracked state is what you are after, not simply hot cream. Sight and sound confirm it: the bubbling changes from a soft foam to a sharp, oily sizzle, and the cream acquires a faintly golden, oily sheen.
  2. 2
Add the yellow curry paste to the cracked cream and fry, stirring constantly, for 2–3 minutes, so the fat carries the paste's aromatics into the dish rather than leaving them raw and harsh at its edges. The paste will deepen in colour, the raw bite of turmeric and lemongrass giving way to a warm, rounded, toasted bloom — that shift in smell is the only reliable signal of readiness.
  3. 3
Add the chicken pieces, turning them in the paste until every surface is coated and lightly coloured, 2–3 minutes, so the paste clings to the meat and will not simply wash off when the liquid goes in. The chicken should appear evenly gilded and the paste should cling rather than pool at the base of the pan.
  4. 4
Pour in the thin coconut milk and bring to a simmer, then reduce the heat to maintain a gentle, steady simmer for 10 minutes, so the chicken cooks through without the sauce breaking into greasy pools from a rolling boil. The sauce will be loose and pale at this stage; this is correct.
  5. 5
Add the potato chunks and onion wedges and continue to simmer for a further 10 minutes, so the vegetables cook evenly in the sauce rather than steaming unevenly above it. Test the potato with the tip of a knife — it should yield without resistance but hold its shape, not collapse.
  6. 6
Season with fish sauce and palm sugar, stir, and taste. The salt of the fish sauce must cut the coconut's natural sweetness, and the sugar lifts the whole rather than dominates — the heat mild but present, the turmeric and lemongrass character of the paste carried clearly through the coconut. Adjust fish sauce in small increments until the balance is correct; taste is the only test.
