    Place the shucked oysters in a bowl, sprinkle with the fine salt, and turn gently to coat. Leave for one minute, then rinse under cold running water, handling the oysters carefully to retain their natural liquor. Drain on a clean cloth. The surface should feel clean and firm, with no residual slime.

    Combine the dashi, soy sauce, mirin, and sake in a measuring jug. Add all reserved oyster shucking liquor. Stir once. The combined volume should be sufficient to cook the rice at the standard absorption ratio for the quantity used; adjust dashi accordingly. Taste before adding the rice — the liquid should read as seasoned ocean, not as plain soy broth.

    Place the drained rice in a heavy-based pot or rice cooker. Pour the seasoned dashi-oyster liquid over the rice. Scatter the ginger julienne evenly across the surface. Bring to a boil over medium-high heat, then reduce to the lowest possible simmer, cover tightly, and cook undisturbed. The rice will require approximately 10–12 minutes at a gentle simmer before the oysters are introduced.

    This is where the dish lives or dies. In the final 5–8 minutes of the rice cooking cycle — when the liquid is nearly absorbed but the surface of the rice is still faintly steaming and moist — lay the pre-treated oysters in a single layer across the top of the rice. Replace the lid immediately and allow the residual steam to set the oysters. They are done when they have turned from translucent to just-opaque at their thickest point, with a silky, barely-set interior that yields without resistance. Oysters held beyond this point will contract, toughen, and surrender their flavour to the surrounding rice without contributing texture.

    Remove the pot from the heat and allow it to rest, covered and undisturbed, for 10 minutes. This steaming phase completes the cooking of the rice grains and equalises moisture throughout the pot. The lid, when lifted, should release a single concentrated plume of oceanic steam.

    Fold the rice once from the bottom with a shamoji (rice paddle), distributing the oysters without breaking them. Serve into bowls, finishing each portion with a pinch of grated yuzu zest or shichimi togarashi and a scattering of shiso chiffonade. Each grain of rice should carry a distinct oceanic sweetness; each oyster piece should read as a silky, concentrated accent against the infused grain.
