    Warm four large serving bowls or a wooden tub thoroughly — set them over hot water or fill with boiling water and drain immediately before service. A cold vessel will drop the noodle temperature within two minutes, destroying the character of the dish.

    Combine the dashi, soy sauce and mirin in a small saucepan. Bring to a brief simmer to drive off the raw alcohol from the mirin. Remove from heat. The tsuyu should taste markedly saltier and more concentrated than a cold dipping sauce — it must be so, since the warm, starch-coated noodle surface and the residual cooking water carried to the bowl will dilute it during service. Taste: the balance should be sharp and salty, not yet harmonious.

    Bring a large volume of unsalted water to a full rolling boil in a heavy pot. Add the udon and cook, maintaining a vigorous boil. Pull the noodles slightly before they reach full softness — they must be a degree firmer than fully cooked at this moment, because the retained cooking water will continue to soften them at the table. Test by biting through a strand: there should be the faintest resistance at the core.

    This is where the dish lives or dies: do not rinse, do not drain. Ladle the noodles directly from the cooking pot into the warmed bowls or tub, bringing with them a generous measure of the warm, slightly milky cooking water. The retained starch in that liquid is the defining element of kama-age — its removal by rinsing produces a different dish entirely. Serve immediately; no resting period is permissible.

    Set the concentrated tsuyu in individual dipping bowls alongside. Arrange grated ginger and sliced negi as garnishes. In the Tokushima variation, place one raw egg yolk per diner in the warm cooking water in the bowl; the diner stirs it to create a natural enrichment that coats each noodle strand. The diner ladles noodles into the sauce bowl, dips briefly, and consumes — the tsuyu, diluted incrementally by the cooking water carried on each ladle, should mellow and integrate over the course of the meal.
