Method

  1. 1
Place the chicken breast-side up in a pot large enough to submerge it, then add the water and salt. Bring to 80 °C over medium heat — the surface should tremble with the occasional slow bubble, never a rolling boil, so the breast meat stays tender and the skin remains intact rather than splitting. Hold at this temperature, adjusting the heat as needed, for approximately 40 minutes, until an instant-read thermometer inserted into the thickest part of the thigh reads 68 °C.
  2. 2
Remove the pot from the heat and leave the chicken submerged in the broth for 20 minutes undisturbed, so the residual heat in the liquid finishes the thighs gently without tightening the breast. Lift the chicken out and set it on a rack over a tray at room temperature, which allows air to circulate and the juices to settle back through the flesh rather than running off the board. Reserve all the broth.
  3. 3
Skim the visible fat layer from the surface of the broth and collect 30 ml in a ladle or small bowl, skimming now while the fat is pooled and easy to read rather than emulsified back into the liquid. Measure 600 ml of skimmed broth for the rice and reserve a further 750 ml for the soup. Set the pot of remaining broth over medium heat and reduce, tasting as it concentrates, until the flavour is full and rounded; season with salt and keep warm.
  4. 4
Place the skimmed chicken fat in a wide, heavy saucepan over medium heat; when the fat shimmers, add the chopped garlic and sliced ginger and fry, stirring, for approximately 90 seconds, so they turn pale gold and carry their fragrance into the fat that will coat every grain of rice. The kitchen should smell of rendered chicken and toasted garlic before you proceed.
  5. 5
Add the rinsed jasmine rice to the pan and stir to coat every grain in the fat, so the grains cook separately and absorb the broth evenly rather than clumping. Pour in the 600 ml of poaching broth, bring to a simmer, stir once, then cover tightly and reduce the heat to its lowest setting; cook for 12 minutes, then remove from the heat and steam, lid on, for a further 10 minutes. The rice is done when every grain is separate and glossy, with no liquid pooling at the base.
  6. 6
While the rice steams, combine the dark soy sauce, fermented soybean paste, grated ginger, grated garlic, and sliced chilli in a small bowl and stir until the paste is fully dissolved into the soy, so the sauce is uniform and the saltiness of the paste is distributed rather than concentrated in pockets. Taste: the sauce should be sharp, saline, and pungent with ginger.
  7. 7
Once the chicken has reached room temperature, slice it thinly and cleanly — breast, thigh, and leg — against the grain where applicable, because cuts made while the meat is still warm will shred rather than release in clean sheets. A ragged, torn slice signals heat retained too long, while a smooth surface and uniformly opaque, moist interior tell you the poach was held correctly from the first step.
  8. 8
Mound the fragrant rice on each plate and arrange the sliced chicken on top. Serve the dipping sauce alongside and ladle the reduced broth into bowls as the accompanying soup.
