Method

  1. 1
Set a wok over the highest available heat until the surface begins to smoke, then add the oil and swirl to coat — a properly smoking wok sears the egg instantly, giving it colour and a faint char that a tepid pan cannot produce. Crack the eggs directly into the wok, allow the edges to set for a few seconds, then scramble them in a cleared space, breaking the yolks and working the egg into large, just-set curds. Pull the egg from the heat while it is still slightly glossy, so the residual heat of the rice finishes it rather than the wok turning it dry and grainy.
  2. 2
Add the day-old rice, pressing and folding it against the wok surface repeatedly, so the dried, separated grains absorb the egg and oil evenly rather than clumping in wet pockets. Continue tossing over high heat until each grain moves freely and a dry, light rustle is audible as the rice crosses the wok — that sound tells you the surface moisture has driven off and the grain will carry seasoning cleanly. Fresh rice, still swollen with moisture, would steam and paste together here; aged rice holds its shape.
  3. 3
Season with fish sauce and white pepper, then toss to distribute evenly. Taste: the rice should be lightly saline and fragrant with pepper, but the seasoning must sit in the background so the crab, once added, reads as the dominant flavour — this is where the dish lives or dies, because any impulse to add oyster sauce or dark soy will stain both the colour and the character of the crab beyond recovery.
  4. 4
Add the flaked crab meat and fold it through the rice for no more than 30 seconds, so the carry-over heat of the rice warms the crab through without the wok's direct flame toughening its fibres and stripping its sweetness. The crab should feel hot at the centre of the wok but should look and smell exactly as it did going in — moist, pearlescent, and sweet. Over-cooking announces itself immediately as a rubbery resistance and a faint flatness where the brine should be bright.
  5. 5
Turn immediately onto plates or into bowls. Garnish with raw spring onion and sliced cucumber at the moment of service, so their freshness and cool crunch contrast the heat of the rice rather than wilting into it. The dominant aroma rising from the plate should be the sweet brininess of the crab, with egg and rice as a backdrop.
