Method

  1. 1
Place a well-seasoned wok or heavy pan over maximum heat, so the surface is searingly hot before anything goes in and the meat colours rather than steams. Add the neutral oil and heat until the surface shimmers and the first wisps of smoke appear. Add the diced pork or Spam and fry, stirring, until the edges colour and the fat begins to render — the pan will smell of roasted meat.
  2. 2
Add the finely chopped aged kimchi to the pan and stir-fry on maximum heat so the residual moisture drives off and the sourness concentrates rather than pools in the pan — 2 to 3 minutes. The kimchi should smell sour and fermented, not raw, and the red colour will deepen visibly as the heat works through it.
  3. 3
Add the cold day-old rice, breaking any clumps with the back of the spatula, then pour over the kimchi brine so the colour and fermented tang reach every grain rather than sitting only in the kimchi pieces. This is where the dish lives or dies: the heat must remain at maximum throughout, so press the rice flat against the hot surface, toss, and press again. The grains must separate and take on the vivid red-orange colour of the kimchi; each grain should feel dry and distinct to the spatula, never clumped or steaming.
  4. 4
Remove the pan from the heat entirely before adding the sesame oil, so the fragrance is not cooked off and the oil arrives as a finish rather than as a frying medium. Drizzle over the sesame oil, scatter the sesame seeds, and fold once to distribute. The sesame fragrance should rise immediately — if it does not, the oil was added too early or the residual heat is insufficient.
  5. 5
In a separate pan, fry the eggs sunny-side-up over moderate heat so the whites set fully without the yolks firming — a yolk that has tightened cannot be broken at the table by the diner. The yolk should tremble but not break when the pan is gently shaken.
  6. 6
Serve the rice in the cooking pan or a stone bowl, topped with one fried egg per portion. The runny yolk should be intact at the table — it is broken over the rice by the diner.
