Method

  1. 1
Toss the cabbage pieces with the coarse sea salt and turn to coat evenly, so the salt draws moisture from the leaves uniformly rather than pooling and over-softening one side. Leave at room temperature for 30–45 minutes only — not the 6–12 hours used for fermented kimchi. The cabbage is ready when it has wilted lightly but retains a perceptible firmness at the core: it should flex without snapping, not collapse.
  2. 2
Rinse the salted cabbage thoroughly under cold running water, two to three changes, so any brine sitting on the cut surfaces is fully washed away rather than carried into the finished dish. Drain in a colander for 10 minutes, then press lightly to expel excess water. Because there is no fermentation to equalise residual salt, the cabbage must taste only faintly seasoned at this stage — taste a stem piece to confirm.
  3. 3
Combine the gochugaru, grated garlic, salted seafood, mulyeot or grated pear, and spring onions in a large mixing bowl to form the yangnyeom, then taste it before it meets the cabbage — this is where the dish lives or dies, because without fermentation's mellowing effect, every flaw in the paste, whether bitterness from old gochugaru, excess salt, or unbalanced heat, will be fully exposed and unforgiving in the finished dish. Adjust salt or sweetener now. The paste should taste rounded, vivid, and just slightly stronger than you want the final dish to be, since the cabbage will temper it a little once dressed.
  4. 4
Add the drained cabbage to the yangnyeom and, wearing gloves, work the paste into the leaves with firm, even strokes so every surface is coated and no pale, undressed patches remain hidden in the folds. Dress the geotjeori immediately before serving rather than hours in advance, so the cabbage holds the snap that defines the dish. Each piece should show an even, vivid red coat when you are done.
  5. 5
Serve at once. Geotjeori must be consumed within two hours of dressing, so the yangnyeom does not continue drawing moisture from the cabbage and turning the texture soft and slack. The correct texture is a clean, audible resistance on the first bite.
