Method

  1. 1
Squeeze the aged kimchi firmly by hand to remove excess liquid, reserving 60 ml of the brine, so the batter does not thin and lose its binding structure during cooking. Chop the kimchi into 2–3 cm pieces so that each piece distributes evenly through the batter and no single bite collapses under its own weight. The kimchi is ready when it holds its shape but releases no further free liquid.
  2. 2
Combine the flour, water, reserved kimchi brine, and egg in a bowl and mix until a smooth batter forms — the brine carries both salt and acid, so taste before folding in the kimchi, checking that the batter is lightly seasoned rather than sharp on the tongue. Adjust the water if necessary. Fold in the chopped kimchi and pork belly until evenly distributed; the finished batter should fall from a spoon in a thick, cohesive ribbon, not run freely.
  3. 3
Heat a wide, heavy pan over medium-high heat and add the oil generously — more than instinct suggests — so the kimchi's acidity has enough fat to turn the surface deep and caramelised rather than dry and powdery. This is where the dish lives or dies: too little oil and the exterior will be pale and floury no matter how long the pancake sits in the pan. The oil is ready when a drop of batter set into it immediately sizzles and begins to firm at the edges.
  4. 4
Pour the batter into the pan and spread it to an even round approximately 1 cm thick, so the centre and edges cook through in the same time. Cook undisturbed over medium-high heat, resisting the urge to move the pancake, so the crust builds and releases cleanly from the pan. The pancake is ready to turn when the edges are visibly set and opaque and the underside, when lifted at the corner, shows a deep golden-brown with faint caramelisation.
  5. 5
Flip the pancake in a single confident motion and press lightly with a spatula so the full surface makes contact with the pan and colours evenly rather than leaving pale, uncooked patches. Cook the second side until it matches the first — a deep, even golden-brown with caramelised edges. The finished pancake is firm to a light press at the centre and fragrant with the sharp, toasted aroma of aged kimchi.
