    Combine the warmed milk, yeast, and a pinch of the measured sugar in a large bowl. Allow to stand until the surface turns visibly foamy, signalling that the yeast is active.

    Add the remaining sugar, beaten eggs, and softened butter to the yeast mixture. Add the flour and salt. Mix to a shaggy dough, then knead by hand or machine until the dough is smooth, elastic, and pulls cleanly away from the bowl. The dough should feel soft and slightly tacky but should not stick to a clean, dry hand.

    Cover the bowl and prove at room temperature for 1 to 2 hours. This is the proofing on which the dish's cloud-soft texture depends. The dough is ready when it has doubled in volume and a finger pressed into the surface leaves an indentation that springs back slowly — neither snapping back immediately (under-proved) nor collapsing without resistance (over-proved).

    While the dough proves, prepare the fruit filling. Place the dried fruit, sugar, and water in a small saucepan over medium heat. Cook, stirring regularly, until the fruit is completely soft and all liquid has been absorbed, producing a thick, spreadable paste that holds its shape on a spoon and does not run. A thin or pourable consistency is not acceptable — it will slide from the well during baking. This is where the kolache lives or dies: a proper filling is a stiff, jammy paste, nothing less.

    Heat the oven to 190°C. Divide the proved dough into roughly 60 g portions and shape each into a smooth round ball. Place on parchment-lined baking sheets with enough space for the rounds to expand without touching. Allow to rest for 15 minutes; the rounds will puff slightly.

    For fruit kolache: press a firm, deep thumb well into the centre of each round — deep enough to hold a generous spoonful of filling without overflow, but not so deep that raw dough forms the base. Fill each well with a heaped tablespoon of the cooled fruit paste. For meat klobasnek: flatten each round into an oval, lay a sausage length or a portion of ham and cheese across the centre, and fold the dough around the filling, pinching the seam firmly closed. Place seam-side down.

    Bake at 190°C for 12 to 15 minutes. The kolache are done when the dough is golden at the edges and on the base but the tops remain pale and the pastry yields to a light press — still soft, not springing back with the firmness of bread. Overbaking produces a dry, bread-like result; the target is a pillow-soft pastry that is, by bread standards, barely done.

    Remove from the oven and brush immediately with melted butter. The surface should absorb the butter and take on a soft, tender sheen. Serve warm, within the hour.
