Method

  1. 1
Score the pork deeply on all surfaces — cuts 2 cm deep, spaced 2–3 cm apart, across every face of the joint — so the marinade has open channels into the muscle rather than sitting on an impermeable rind. The channels must reach the interior flesh, not merely break the surface. Run a finger along each cut to confirm depth: the blade should have parted the muscle, not merely furrowed it.
  2. 2
Combine the white vinegar, garlic paste, black pepper, coarse salt, cumin, and coriander into a cohesive paste, then press it firmly into every scored channel, working it into the cuts with the fingers before coating all exterior surfaces, so the spice reaches the interior rather than glazing only the outside. Wrap tightly and refrigerate overnight — a minimum of 8 hours — because without that sustained contact the vinegar cannot carry the aromatics to the centre of the joint. At the end of marination the vinegar will have visibly tightened and paled the surface flesh along the scored lines, which tells you it has worked.
  3. 3
Bring the pork to room temperature for 30 minutes before roasting, so the joint does not begin cooking with a cold core that forces the outside to overwork before the interior is ready. Place in a roasting vessel and set in an oven at 160 °C. Roast low and slow for 2–3 hours depending on the size and cut — loin at the shorter end, shoulder at the longer — because the gentle heat allows the fat to render gradually and the crust to build without seizing the outer flesh dry.
  4. 4
The rendered fat and vinegar together build the crust in successive layers. By the final basting the drippings should be deep amber and fragrant with caramelised garlic — do not discard them.
  5. 5
The roast is done when the crust is deeply coloured and firm to a light press, and the internal flesh, when probed at the thickest point, yields clear juices — not pink — so you know the heat has moved all the way through the scored channels. The scored channels will have opened and darkened, the spiced crust filling each one.
  6. 6
Rest the joint uncovered for 20 minutes before carving, so the juices drawn to the surface during roasting settle back through the muscle and every slice remains moist rather than bleeding out on the board. The flesh should feel resilient rather than taut when pressed at the close of the rest. Slice to reveal aromatic, coloured meat at the scored lines running through the interior — uniformity of flavour from crust to centre confirms the technique succeeded.
