1
Combine the tapioca starch with the chosen flavouring — shrimp, fish, or vegetables — to form a workable dough. The mass is ready when it holds together without crumbling and yields no dry pockets when pressed.
-
2
Shape and dry the dough according to the form required. The unfried cracker is ready when it is fully desiccated: it snaps cleanly rather than bending, and the surface is pale and matt.
-
3
Heat the oil to deep-frying temperature. This is where the dish lives or dies: the dried cracker must enter oil that is hot enough to cause immediate, violent expansion. A cracker dropped into insufficiently hot oil will absorb grease and fail to puff. The correctly fried krupuk blooms within seconds, expanding to a rigid, uniformly aerated slab whose surface is dry to the eye and entirely free of oil sheen.

4
Remove the krupuk and drain. The finished cracker is done when it holds its expanded form rigidly and produces a sharp, loud crack under the lightest pressure — the audible signal that the textural architecture of the dish is complete.
