    Combine the yogurt, ginger paste, garlic paste, chilli powder, garam masala, cumin, coriander, and turmeric in a bowl and mix to a uniform paste. Cut deep slashes to the bone across the legs, thighs, and breast of the whole chicken, so the marinade reaches the dense muscle closest to the bone rather than sitting only on the surface. Work the paste thoroughly into every slash and under the skin where your fingers can reach, then cover and refrigerate for a minimum of 4 hours and up to 12 — the marinade is ready when the yogurt has visibly clung to and saturated every cut surface.

    Place the marinated chicken on a rack set over a pot of simmering water, or in a steamer basket, and cover tightly so no steam escapes and the heat stays even throughout. Steam over a steady medium heat for 35–40 minutes — this step cooks the bird completely through in a gentle, moist environment so the flesh stays yielding and the spices set into the meat rather than scorching during the later fry. The chicken is done when the juices at the deepest thigh slash run clear and the flesh yields without resistance when pressed.

    This is where the dish lives or dies. Heat the oil in a deep vessel to 180 °C, then lower the whole steamed chicken carefully into it and fry, turning once, for 8–10 minutes total — the frying develops crust alone, since the interior is already cooked through, and if the oil is too cool the skin will be flaccid and pale, while too long in the oil will drive out the juiciness the steam worked to build. The moment the skin sounds hollow when tapped and releases from the oil without dragging, the chicken is ready.

    Lift the chicken from the oil and drain briefly on a rack rather than on paper, so air circulates beneath the bird and the crust stays crisp on all sides. Transfer it whole to the table uncovered, because steam trapped beneath the skin will soften the shell you have just built. The bird is ready to pull apart by hand when the aroma of the spice crust is immediate and the surface glistens without weeping oil.
