    Place the live snails in a ventilated container — a crate or basket covered with a cloth. Spread the coarse flour or stale bread across the base and lay in the aromatic herbs. Hold the snails here for a minimum of 48 hours at cool room temperature, away from moisture. The snails feed on the flour and herbs; the gut clears and the flesh takes on the herb's character. The purge is complete when the snails have ceased feeding and the gut contents are no longer visible as dark matter behind the shell opening.

    After purging, wash the snails thoroughly under cold running water, scrubbing the shells. Discard any snails that did not survive the purge. The shells must be clean and free of grit, mucus, and debris before cooking proceeds.

    Set a clay pot (tegame di terracotta) over medium-low heat. Pour in the olive oil and add the crushed garlic. Allow the garlic to soften slowly — it must not colour. The oil will be fragrant and the garlic yielding to the touch when it is ready; this takes approximately 5–8 minutes. Do not rush this stage: the garlic must flavour the oil without bitterness.

    Arrange the snails shell-side down in a single layer across the base of the clay pot. The shell opening must face downward into the oil so that the olive oil and aromatics can enter and baste the meat throughout cooking. This orientation is where the dish lives or dies: shell-side up starves the meat of oil, the shell dries, and the flesh toughens beyond recovery.

    Add the crumbled chilli and the chopped tomato. The tomato is a note — use it sparingly so the dish remains an olive oil and garlic preparation, not a tomato sauce. Do not cover the pot tightly: leave a gap so steam can escape. The snails must sauté in olive oil, not stew in accumulated water. Cook at medium-low heat, without raising it, for 45–60 minutes. The snail meat is done when it pulls cleanly and without resistance from the shell using a pin or small fork, and offers no rubbery spring.

    Scatter the chopped parsley over the pot and season with sea salt. Season only now — the garlic and oil have provided sufficient flavour during the long cook. Stir once to distribute the parsley through the oil. Taste the cooking oil: it should be deep with garlic, mineral with the character of the snail, with the chilli present but not dominant.

    Serve the snails directly from the clay pot, shell-side down. Each diner extracts the meat with a pin, eating snail by snail. Bread is essential for eating alongside and for dipping into the residual garlic-snail oil remaining in the pot — this oil is among the most flavoured elements of the dish.
