    VEGETARIAN VERSION — Heat a wok over high heat until smoking. Add the oil, then fry the doubanjiang until the oil turns a deep, glossy red and the paste smells fragrant and cooked through, about 90 seconds. Add the douchi and stir briefly to combine.

    Add the diced shiitake mushrooms and fry, stirring constantly, until they have softened and released their moisture. If using toasted walnuts, add them now and stir once to coat. The wok should smell of deeply savory, nutty mushroom — not raw.

    Pour in the vegetable stock and the mushroom soy or dark soy sauce. Bring to a simmer. Slide in the tofu cubes gently so they do not break. This is where the dish lives or dies: the tofu must poach in the sauce at a steady simmer long enough to absorb the ma la flavour, without being agitated into collapse — tip the wok or use a wide spoon to baste rather than stir.

    Once the tofu is heated through and the sauce has reduced slightly, taste for seasoning. Dust with ground Sichuan peppercorn. The finished dish should carry a distinct numbing warmth on the tongue.

    JAPANESE MABO DOUFU ADAPTATION — Fry the minced pork in oil over high heat until coloured. Add the tobanjian or reduced doubanjiang and the douchi; stir until fragrant. Add mirin and allow it to bubble briefly so the alcohol cooks off — about 30 seconds.

    Add the stock and bring to a simmer. Slide in the tofu. Allow to cook gently for 2–3 minutes. Stir in the slaked starch in a thin stream, moving the wok or pan constantly, until the sauce is noticeably thicker and coats the tofu — distinctly more viscous than the Sichuan original.

    Finish with ground Sichuan peppercorn if using, at a reduced quantity. The completed Japanese adaptation should read sweet and mild at the front, with only a background heat — markedly softer than the canonical Sichuan version.
