Cut the kernels from each ear of corn with a sharp knife, collecting them and all released juice in a wide bowl. Turn the knife to its spine and scrape each spent cob firmly from tip to base — the milky starch that collects is the dish's natural thickener and must not be discarded. Add it to the bowl with the kernels. The scraped liquid should be visibly cloudy and starchy.

Heat the butter or bacon fat in a wide, heavy pan over medium-high heat until the fat shimmers and a kernel dropped in sizzles immediately. Add the onion and bell pepper and cook, stirring, until the onion is translucent and the edges of the pepper show the first signs of colour — approximately 4 minutes. The pan should smell of sweet alliums, not scorched ones.

Add the diced tomato and the entire corn-and-starch mixture. Season with cayenne, black pepper, and salt. Spread the corn across the pan and leave it largely undisturbed for 2–3 minutes, then stir and repeat. Cook over medium-high heat for 5–7 minutes total until the kernels show patches of golden colour and the tomato has broken down into the corn rather than remaining as distinct pieces. This is where the dish lives or dies: sufficient caramelisation concentrates the corn's sweetness and develops toasty depth; pulling the pan too early leaves the corn raw and watery, while leaving it too long collapses the kernels into mush.

Reduce the heat to medium. Pour in the heavy cream and stir to incorporate, scraping any caramelised corn from the pan floor. Cook for a further 2–3 minutes until the cream and the corn's own starch bind the kernels into a cohesive, creamy matrix — neither pourable nor dry. Each kernel should remain distinct. Total cooking time from the corn's entry into the pan should not exceed 15–20 minutes. Press a kernel against the side of the pan: it should yield with slight resistance, not dissolve.

Taste and adjust cayenne and salt. The flavour sequence should be sweet corn first, then butter, then a slow, secondary cayenne warmth. The colour should be golden corn speckled with red from tomato and pepper and green from bell pepper.
