Build a wood fire using olive, pomegranate, or citrus wood and allow it to burn down to a deep, stable bed of embers with a low, consistent flame at one side. The fire must produce radiant heat and smoke, not open flame. Prepare 4 long wooden stakes, each sufficient to impale and support the opened fish at a ground angle.

Butterfly the fish completely: split from the belly, open it flat, and score the flesh deeply in a cross-hatch pattern at 2 cm intervals. The scores must reach close to the skin to allow the marinade and smoke to penetrate evenly through the flesh.

Combine the olive oil, turmeric, tamarind paste, and salt into a marinade. Work it thoroughly into the scored flesh, pressing it into each cut. Leave the fish to marinate for a minimum of 30 minutes — the turmeric and tamarind must penetrate the scored flesh; surface-only marinade washes off in the first minutes of cooking. The flesh will take on a deep ochre stain from the turmeric.

Impale the fish on the stakes through the flesh and drive them into the ground at an angle around the fire, skin-side facing the heat. The fish must not sit over direct flame. Position it to receive radiant heat from the embers and smoke from the wood — this is where the dish lives or dies: direct flame chars the exterior before the interior cooks through; only indirect radiant heat produces the slow, even cook that defines masgouf.

Cook for 2 to 3 hours, maintaining the fire with additional wood as needed to sustain steady heat and smoke. The smoke from the aromatic wood is the secondary flavour layer inseparable from masgouf's identity. The skin will caramelise and tighten. Correct doneness is reached when the skin is deeply bronzed and crackling and the flesh, probed at its thickest point, pulls apart in clean, moist flakes.

In the final 5 minutes of cooking, move the fish briefly flesh-side down directly onto the embers. Hold for 4 to 5 minutes until the exposed flesh surface develops a firm, charred crust that contrasts with the soft, smoky interior beneath.

Transfer the fish to a board and serve immediately with flatbreads, sliced tomatoes, sliced onion, chilli, pickles, and lemon wedges. These accompaniments are not optional garnishes: their acid and heat are the palate-cleansing counterpoints essential to the masgouf table. The fish is pulled apart by hand at the table.
