    Halve the aubergines lengthways and scoop out the flesh with a spoon, leaving a shell at least 1 cm thick — too thin and the walls will collapse under the weight of the filling during baking. Salt the interior of the shells and set them cut-side down on a rack or board for 20 minutes so the salt draws excess moisture out through the flesh rather than letting it pool and steam inside the oven. The shells will weep moisture and darken slightly; pat them dry with kitchen paper, then chop the scooped flesh roughly and set aside.

    Combine the squeezed bread, chopped aubergine flesh, capers, olives, garlic, parsley, oregano, pecorino, and peperoncino in a bowl, then fold the remaining anchovies into the mixture so they dissolve through the filling and season it from within rather than sitting as distinct pieces. Lay one anchovy fillet across each aubergine half in the baking dish. Add the olive oil and work everything together with your hands until the mixture coheres without being wet — this is where the dish lives or dies: the filling must be assertively seasoned and just bound by the oil, because if it is slack or bland, neither baking nor cooling will correct it. Taste and adjust salt and peperoncino.

    Heat the oven to 180 °C and arrange the drained aubergine shells cut-side up in a lightly oiled baking dish. Mound the filling into each half, pressing it in and doming it generously above the rim so that as the aubergine softens and sinks slightly, the filling remains proud and exposed to the heat. Leave the coarse bread pieces visible at the surface and do not smooth the tops, since the irregular texture catches the heat and crisps into a crust; finish with a drizzle of olive oil over each filled half.

    Bake at 180 °C for 30–40 minutes, resisting the urge to open the oven early so the shells have time to yield completely through to their thickest point — press there with a finger; they should give without resistance. The top of each half should be crusted and deep golden, and the filling fragrant with oregano and visibly crisped at the bread surface.

    Remove from the oven and leave the halves in the dish to cool to room temperature, uncovered, so that steam escapes and the shells firm slightly rather than turning soft and waterlogged. Do not serve hot: as the dish cools, the olive oil, anchovy, and caper notes emerge fully and the flavours meld in a way that heat suppresses. Serve directly from the dish at ambient temperature.
