    Make the bread dough. Combine flour, sugar, salt and yeast in a bowl. Add the beaten egg and lukewarm milk; bring together into a rough dough. Incorporate the softened butter and knead until the dough is smooth, elastic and slightly tacky — it pulls cleanly from the work surface and springs back when pressed.

    Place the dough in a lightly oiled bowl, cover and allow the first proof to proceed at room temperature until the dough has doubled in volume. A finger pressed into the centre of the dough leaves an indentation that neither springs back immediately nor collapses.

    Make the cookie dough. Beat butter and sugar together until pale. Add the beaten egg and vanilla extract; mix until combined. Sift in the flour and baking powder and bring together into a soft, cohesive dough. Wrap and rest in the refrigerator for 30 minutes until firm enough to handle without tearing — the dough holds a clean edge when pressed.

    Divide the proved bread dough into six equal portions; shape each into a smooth, taut ball. Divide the cookie dough likewise into six portions. On a lightly floured surface, flatten each cookie dough portion into a round disc approximately 10 cm in diameter. This is where the dish lives or dies: centre one bread dough ball on each cookie disc and draw the cookie dough up and around the sides, stretching it gently to encase the bread completely without tearing. The seam must close at the base and the cookie shell must form an even, unbroken layer of consistent thickness. Any tear or gap will burst open during baking, losing the defining crackled shell.

    Roll the exterior of each assembled piece in caster sugar to coat. Using a bench scraper held at a shallow angle, score a grid pattern across the cookie surface — lines approximately 1 cm apart in both directions. Press only deep enough to score the cookie layer; the blade must not penetrate through to the bread dough beneath. The pattern is visible as clean, defined lines.

    Place the scored pieces on lined baking trays, spaced well apart. Prove at room temperature until the bread interior has expanded noticeably and the cookie shell has tightened and shows faint surface tension — approximately 40 minutes. Do not over-proof: the cookie shell should show no irregular cracking at this stage. For cleaner pattern definition, transfer the trays to the refrigerator for 10 minutes before baking.

    Preheat the oven to 190 °C. Brush the cookie surface lightly with beaten egg wash. Bake until the cookie crust is set, golden and crackled, and the bread interior is fully risen and cooked through. The crust should feel firm and dry to a light tap and carry a faint caramel scent without any bitter edge — overbaking beyond this point will introduce bitterness as the sugar caramelises too far.

    Transfer to a wire rack. Melon pan is at its optimum within two hours of baking, while the contrast between crisp cookie shell and yielding bread interior remains at full expression. The shell softens as it ages and the defining textural duality diminishes.
