    Place each escalope between two sheets of cling film or baking paper. Pound with a meat mallet or rolling pin to a uniform 4–5 mm thickness. Uneven thickness produces simultaneously overcooked thin areas and undercooked thick centres. The surface should be flat and consistent across its full extent.

    Set out three wide, shallow vessels: one with flour seasoned with salt, one with beaten egg, one with fine breadcrumbs. Coat each escalope first in flour, pressing so the surface is fully covered — this adhesion layer is the structural foundation without which the crumb coat slides off. Pass immediately through beaten egg, allow the excess to fall away, then press firmly into the breadcrumbs on both sides. The surface should show a continuous, even crumb with no bare patches visible.

    Prepare the tomato sauce. Warm a small pan over medium heat; add a film of neutral oil and the garlic. Cook until the garlic softens and turns pale gold, then pour in the passata. Season with salt. Simmer until the sauce thickens slightly and no longer tastes raw — approximately 10 minutes. The sauce must be plain; no herbs are added. Set aside.

    Heat neutral oil in a wide, deep pan to 180 °C. Fry each breaded escalope in a single layer, turning once, until both sides are uniformly golden. The oven stage that follows melts only the topping — it does not cook the meat. The escalope must be fully cooked and coloured at this stage. Drain on a wire rack.

    Heat the oven to 220 °C. Transfer the fried escalopes to a wire rack set over a baking tray. Spread a 2 mm layer of tomato sauce across the top surface only of each escalope — this is where the dish lives or dies: flooding with sauce creates steam that softens all crumb coating and eliminates the textural contrast that defines the dish. Lay a slice of ham over the sauce, then arrange the sliced mozzarella and provolone in a 2:1 ratio on top. Any excess sauce should be allowed to drip through the rack before the tray enters the oven.

    Bake for 5–7 minutes only, until the cheese is fully melted and beginning to blister at its edges. The mozzarella will show a molten stretch and the provolone will colour lightly. Do not extend the baking time beyond this point — prolonged heat dries out the meat inside the breading. Serve immediately.
