    Roll the cold puff pastry to a uniform 2 mm thickness — no thicker. Dock the entire surface thoroughly with a fork or roller docker. Rest the sheet in the refrigerator for 15 minutes. The dough should feel cold and firm to the touch when it enters the oven.

    Place the docked sheet on a baking tray. Lay a second flat baking tray on top as a weight. Bake at 190 °C for 15 minutes under the weight, then remove the weight and bake for a further 10–15 minutes. This is where the mille-feuille lives or dies: the pastry must reach a state of complete dryness throughout — not merely golden in colour. Tap the surface with a knuckle; a correctly baked layer rings clear and hollow, like struck glass. A dull, soft sound means interior moisture remains and the layer will soften within the hour. Both surfaces must show a deep, even caramel gold; a pale underside demands further oven time.

    Transfer the baked sheet to a wire rack. Cool completely. Cut into three equal rectangles of identical dimensions. The layers may be held in an airtight container for up to 24 hours if they are completely cold and dry before storage.

    Fold the cold whipped cream into the cold crème pâtissière to produce the crème légère. The mixture should be smooth and hold a soft shape — no streaks of unincorporated cream remain visible.

    Spread the crème légère onto the base pastry layer to a depth of 8–10 mm — no deeper. Lay the second pastry layer on top and press very gently. Spread a second layer of cream to the same depth. Set the third layer on top, flat side facing upward. Refrigerate the assembled mille-feuille for 30 minutes to firm the structure. The form should hold its shape cleanly when removed from the refrigerator.

    Warm the white fondant until it pours freely. Warm the chocolate fondant to the same temperature. Pour the white fondant over the top layer in one smooth, continuous sheet. Immediately pipe parallel lines of chocolate fondant across the width while the white fondant is entirely liquid. Draw a toothpick or knife tip through both fondants at right angles to the piped lines, alternating direction with each pass. The feathered chevron pattern forms only while both fondants are fluid and at the same temperature — if the white fondant has begun to skin, the chocolate lines will not feather.

    Before the fondant sets fully, mark portion lines across the top with a sharp knife. Refrigerate until the fondant is firm. Slice along the pre-marked lines with a sharp serrated knife using a sawing motion — no downward pressure. The sliced face should show three distinct, intact pastry layers separated by two even bands of cream.
