    Place the terracotta casserole (tian or tòcqu) over low heat. Add the panzetta and render slowly for three minutes, turning once, until the fat runs clear and the surface of the meat colours to a pale gold. The aromatic base of the entire dish is formed here — the rendered fat must smell of cured pork and herb before any vegetable enters the pot.

    Add the leek, carrot, celery, and potato to the rendered fat. Stir to coat each piece in the panzetta fat. Cook gently for five minutes until the leek softens and its raw sharpness subsides — the vegetables should glisten but not colour.

    Add the soaked and drained legumes, the tomato (dried in winter, fresh in summer), and enough water to cover generously — approximately 1.5 litres. Lower the herb bundle into the pot. Bring the liquid up to the point where the surface quivers but does not bubble — a bare simmer, never a rolling boil.

    Maintain the bare simmer for ninety minutes to two hours, checking occasionally that the surface continues to quiver rather than boil. The legumes will gradually yield their starch to the broth; the soup thickens progressively from within. The cook time is complete when the legumes are soft-yielding to light pressure but hold their shape without splitting, and the broth has turned thick and opaque.

    Remove and discard the herb bundle. Taste for salt — the panzetta carries salt, so assess before adding any. In winter, lay one thick slice of brocciu passu into each bowl and ladle the hot minestra over it; the cheese will melt into the surface over one to two minutes, rounding the vegetable sweetness with saline, lactic depth. The soup is ready when the broth smells of maquis herbs, panzetta-rendered fat sweetness, and deep legume earthiness without a single flat or watery note.

    Serve in deep bowls. Tear chestnut bread directly into the bowl at table — this is the Corsican thickening, not pasta. The soup is complete as a single-bowl meal.
