    Remove the bilberries from any refrigeration well in advance, so that their fragrance opens fully and the fruit gives its flavour cleanly rather than tasting flat and closed as it does when cold. Spread them on a clean surface and pick over, discarding stems, leaves, and any crushed or mouldy fruit. They are ready when they have returned fully to room temperature and their fragrance is perceptible without pressing the fruit.

    Add a small pinch of fine salt to the cold malga cream and stir briefly to dissolve, so the salt lifts and sharpens the cream's own sweetness and floral character rather than announcing itself as salt. Taste: the salt must not register as salt but as an amplification of the cream's natural sweetness and floral character. Adjust if necessary — because the cream is the only component with any latitude, and overworking or over-salting it is irreversible.

    Divide the bilberries among four bowls. If the fruit is fully ripe — small, very dark, and collapsing slightly at the skin — no sugar is added. If the berries are firm and less deeply coloured, dust lightly with powdered sugar and allow to stand for two minutes until a little juice begins to bead at the surface, so the sugar draws out the berry's own liquid and the sweetness comes from within the fruit rather than sitting on top of it.

    Pour the very cold cream directly over the room-temperature berries at the table, so the contrast between cold cream and warm fruit holds its edge for the first mouthful, which is the one that counts. The temperature contrast — cold cream meeting warm fruit — is structural to the dish. Serve immediately, before the cream warms or the berries chill.
