    Prepare the dashi base appropriate to the miso type — kombu dashi for white miso, niboshi dashi for red miso. Bring to a gentle simmer over medium heat. The stock should be clear and fragrant, not cloudy.

    Add any root vegetables or other slow-cooking ingredients first, simmering until just tender. Add tofu cubes and pre-soaked wakame in the final minute of cooking, heating only until warmed through. The tofu should hold its shape and the wakame should be vivid and soft.

    Remove the pot from direct high heat. Scoop the miso into a ladle, add a small quantity of hot dashi from the pot, and stir until the miso is fully dissolved and smooth before returning the ladle's contents to the pot. This is where the dish lives or dies: the miso must never boil after addition — heat only to 70–80 °C — or its enzymes are destroyed and the flavour turns harsh and flat.

    Taste and adjust the miso quantity, mindful that salt content varies dramatically between brands and types. The soup should present dashi forward, with miso functioning as seasoning rather than as the primary base.

    Ladle immediately into warmed bowls. Scatter finely sliced negi or mitsuba across the surface at the last second. The garnish should lie fresh and uncooked on the surface.
