    Prepare all garnishes before heating the dashi. Cube the tofu. Rehydrate the wakame in cold water for the time its packaging requires, then drain and cut. Blanch any vegetables separately if required. All garnish elements must be ready before the dashi reaches temperature — nothing is cooked in the soup itself.

    Pour the niban dashi into a saucepan and bring it to just below the boil. The surface should tremble and show the first signs of movement but must not show a rolling boil. Target temperature is 65–70 °C. Remove the pan from direct high heat at this point.

    This is where the dish lives or dies. Place the measured miso paste in a ladle or small fine-mesh strainer and lower it into the hot dashi. Using chopsticks or a small spoon, work the paste through the ladle or strainer into the liquid, dissolving it completely before it enters the pot. The surface of the soup must not be at an active boil at this moment, nor at any point afterward. Prolonged heat drives off the volatile aromatic compounds produced by fermentation — the glutamates survive boiling, but the fermented depth and complexity do not. Once the miso has dissolved fully, taste and adjust.

    Add the prepared garnishes — tofu, wakame, spring onion — directly to the soup off or at the lowest possible heat. The residual temperature of the dashi is sufficient to warm tofu and wakame; neither requires further cooking. The soup is ready when it smells of layered fermented depth beneath a clean ocean note from the dashi. If the smell is flat or primarily of cooked vegetables, the miso has been overheated.

    Ladle immediately into warmed bowls and serve. Do not return the pot to the heat. Do not allow the soup to stand on the stovetop. A single sip should deliver savoury warmth that feels complete — the miso variety clearly identifiable, the dashi present but not dominant.
