Method

  1. 1
Place the dried miyeok in a large bowl and cover with cold water, using cold rather than warm water so the seaweed rehydrates slowly and evenly without turning slack before you are ready to cook it. Leave to soak for 20–30 minutes, then drain, rinse thoroughly under cold running water, and cut into bite-sized lengths. The rehydrated seaweed is ready when it is silky to the touch yet retains a slight, discernible firmness — not limp, not swollen and translucent.
  2. 2
Set a heavy pot over medium heat, add the sesame oil, and when it shimmers add the garlic and the drained miyeok. This is where the dish lives or dies: stir-fry for 2–3 minutes, turning the seaweed continuously so every strand is coated in the sesame oil and the heat firms each strand against itself, keeping them distinct and silky in the finished broth rather than collapsing into a gelatinous, structureless mass. Miyeok added raw directly to hot stock will not recover that texture.
  3. 3
Add the thin-sliced brisket to the pot and sauté it briefly alongside the miyeok, turning the pieces so the beef loses its raw, bright-red colour on all sides before the water goes in, which builds a richer, more rounded base in the broth. A minute or two over medium heat is enough — you are not trying to brown the beef deeply, only to close the surface.
  4. 4
Pour in the 1.5 litres of water and bring the pot to a gentle simmer over medium heat, then add the guk-ganjang and simmer uncovered for 10–15 minutes, so the light soy sauce seasons the broth without darkening it and the pale, clear amber colour is preserved. The broth should carry a clean mineral depth when you taste it; remove the pot from the heat no later than 20 minutes after the simmer begins, because beyond that point the miyeok turns slippery and sheds the pleasant marine texture that defines the soup.
  5. 5
Taste and adjust seasoning with a small addition of fine salt if required, adding it gradually so the seaweed's natural mineral quality is enhanced without being obscured. Serve immediately in deep bowls, accompanied by steamed rice.
