    Portion the ice cream into 8 balls of approximately 30 g each. Place them on a parchment-lined tray and freeze at -18 °C until completely solid — a minimum of 2 hours. The ice cream must be frozen solid, with no give at the surface, before wrapping begins.

    Combine the mochiko, sugar, and water in a microwave-safe bowl and whisk until the mixture is fully smooth and lump-free. Cover loosely and microwave on medium power in 1-minute intervals, stirring between each, until the dough is translucent, cohesive, and stretches without tearing — typically 3 to 4 minutes total. Alternatively, steam the covered bowl over boiling water for 20 minutes, stirring halfway. The dough is ready when it pulls away from the bowl cleanly and holds a smooth, glossy surface.

    Dust the work surface generously with katakuriko. Turn the hot mochi dough onto the surface and dust the top. Roll or press to an even sheet approximately 3–4 mm thick. Cut into 8 rounds large enough to enclose one ice cream ball with overlap at the base — approximately 10–12 cm in diameter. This is where the dish lives or dies: the mochi must be worked quickly while it retains warmth and pliability; as it cools it loses elasticity and will crack during shaping. Keep the ice cream balls in the freezer until the moment each one is wrapped.

    Working one piece at a time, remove a single ice cream ball from the freezer and centre it on a mochi round. Gather the edges of the mochi upward around the ball, pleating as necessary, and pinch them firmly closed at the base. The pinch must be decisive — any gap will open during refreezing. Dust the finished piece lightly with katakuriko, set seam-side down on a parchment-lined tray, and return immediately to the freezer. Repeat for the remaining balls.

    Freeze the completed mochi ice cream pieces for a minimum of 2 hours. Before serving, rest them at room temperature for 5 to 10 minutes. The shell should yield to light finger pressure — soft and pliable — while the interior remains cold. Slice one piece to verify even mochi thickness of 3–4 mm before presenting the remainder.
