    Combine the mochiko with water in a bowl, adding the water gradually and working the mixture until a smooth, lump-free dough forms. The dough should hold its shape when pressed but yield without cracking — consistency is that of a firm paste.

    Press the dough evenly into the monaka-gata (metal shell moulds), filling each half to the rim without excess. Bake in a low oven until the shells are fully desiccated and release cleanly from the mould. This is where the dish lives or dies: any residual moisture in the shell will produce a soft, papery texture rather than the defining brittleness. The finished shell is paper-thin, rigid, and sounds hollow when tapped.

    Remove the baked shells from the moulds and allow to cool completely on a wire rack. Store unfilled shells in an airtight container with a silica gel packet until assembly — they will keep crisp for weeks under these conditions.

    Confirm the anko is at room temperature and of sufficient stiffness: it should hold a clean peak when lifted on a spatula and not slump or run. Warm anko accelerates shell softening; low-sugar or loose anko will soak through the shell within minutes.

    Spoon the anko onto one shell half, mounding it just enough to meet the opposing shell without excess — overfilling will cause the filling to squeeze out and tear the delicate wafer at the join. Press the second shell half gently into place. The assembled monaka must be served within two hours of filling; beyond this point the shell begins to absorb moisture from the paste and the defining textural contrast is lost.
